Zucchini with Onions and Tomatoes Recipe

Zucchini with Onions and Tomatoes Recipe - 10 servings


1 large white onion, chopped

3 cloves garlic, peeled

3/4 cup white wine

1 16-ounce can plum tomatoes, diced

1 cup chicken stock

1/8 teaspoon thyme

1/8 teaspoon oregano

1/8 teaspoon marjoram

1/4 teaspoon dried basil

1/4 teaspoon black pepper

3 medium zucchini, thinly sliced


In a nonstick skillet, saute onion and garlic in 1/2 cup white wine, just until onions begin to soften. In a saucepan, combine remaining 1/4 cup wine with tomatoes, stock, thyme, oregano, marjoram, basil and black pepper. Bring to a boil, reduce heat to simmer. Add onions, garlic and zucchini. Cover partially with lid. Simmer 30 minutes.
