Zucchini with Garlic and Tomatoes Recipe - 6 servings


1 16-ounce can plum tomatoes, diced

1/2 medium yellow onion, chopped

2 cloves garlic, minced

3 small zucchini, sliced 1/2 inch thick

2 tablespoons chopped fresh parsley

1/2 teaspoon dried basil or 4-6 leaves fresh


In a medium saucepan, simmer tomatoes, onion and garlic 30-45 minutes. Add sliced zucchini, simmer 15-20 minutes, or just until zucchini begin to soften but are still crisp-tender. Sprinkle with parsley and basil.
