Holiday Yams Recipe

Holiday Yams Recipe - 8 servings

Ingredients:

2 large Red delicious apples, sliced

1/3 cup chopped pecans

1/3 cup brown sugar

1/2 teaspoon cinnamon

1 28-ounce can yams, drained

1 cup miniature marshmallows

Method:

Preheat oven to 350oF. Put apples and pecans in a medium mixing bowl. Combine brown sugar with cinnamon in a small bowl. Pour over apples and gently toss until apples are coated. Arrange yams in a 1 1/2-quart ovenproof casserole. Poke apples in between yams. Cover with aluminum foil. Bake 35 to 40 minutes. Sprinkle with marshmallows. Broil 6 to 8 minutes, or until marshmallows are lightly browned.
