Wild and White Rice Salad Recipe

Wild and White Rice Salad Recipe - 12 cups


1 1/2 cups uncooked wild rice

1 cup beef consomme

1 cup uncooked short grain white rice

1 red onion, coarsely chopped

8-ounce can mushroom stems and pieces, drained

1/2 green pepper, coarsely chopped

1/2 red pepper, coarsely chopped

Salt and black pepper to taste



3/4 cup olive oil

1/4 cup cider vinegar

3/4 teaspoon salt

1/4 teaspoon black pepper


Steam wild rice according to package directions, substituting 1 cup beef consomme for 1 of the cups of water. Allow 45-60 minutes cooking time. In a separate pan, steam white rice according to package directions. Allow 20-30 minutes cooking time. In a large salad bowl, combine cooked wild and white rice. Add onion, mushrooms and green and red peppers. In a jar with cover, combine dressing ingredients. Pour 1/2 cup of dressing over salad and toss. (Reserve remaining dressing for later use). Season to taste with salt and pepper.
