Vermicelli-Stuffed Artichokes Recipe - 4 Servings

Ingredients:

4 fresh artichokes, cooked

1/2 pound vermicelli, cooked al dente

1 ripe tomato, diced

1/3 cup Pesto

Method:

Remove small center leaves of each artichoke, leaving a cup, carefully remove choke. In a bowl, toss vermicelli with tomato and pesto, stuff artichokes.
