Vera Cruz Tomatoes Recipe

Vera Cruz Tomatoes Recipe - 4 servings


1/4 cup chopped onion

Wine or broth

6 cups trimmed fresh spinach (1 bunch), chopped

1/2 cup nonfat sour cream

Dash of Tabasco sauce

4 medium tomatoes

3 tablespoons grated part-skim mozzarella cheese


Saute onion in a small amount wine or broth until tender, add spinach and cook 3 to 4 minutes. Cool, drain, and squeeze excess water from spinach. Mix spinach and onion with sour cream and Tabasco sauce. Cut tops from tomatoes and remove centers, leaving shells. Fill shells with spinach mixture. Place in a baking dish. Bake at 375oF for 20 to 25 minutes. Top with cheese.
