Tuscan Bean Salad Recipe

Tuscan Bean Salad Recipe - 8 servings



2 garlic cloves, minced

3 tablespoons fresh lemon juice

1/4 cup extra virgin olive oil

1/2 teaspoon salt

1/4 teaspoon pepper


3 15-ounce cans cannellini beans, rinsed

1 1/2 cups coarsely chopped red onion

2 large ripe tomatoes, coarsely chopped

1/2 cup chopped celery

3/4 cup coarsely chopped fresh flat-leaf parsley


Combine garlic, lemon juice, olive oil, salt and pepper in a covered jar and shake until well blended. Arrange cannellini beans in a shallow salad bowl and toss with 2 tablespoons of the dressing. Chill beans and remaining dressing. Just before serving, toss beans with onion, tomatoes, celery, parsley and remainder of dressing.
