Tomatoes Stuffed with Snow Peas Recipe - 4 servings


4 ripe tomatoes

3/4 pound snow peas


Cut tops from tomatoes. Using a curved grapefruit knife, hollow centers. Stand tomatoes upside down to drain. In a covered vegetable steamer basket over boiling water, steam snow peas 1-2 minutes, or until crisp-tender. Drain. Arrange vertically in tomato shells.


Variations : Hollow cherry tomatoes for each end. Thread 3-4 snow peas through center of each tomato. Substitute steamed green beans for snow peas.
