Tomato, Spinach and Chicken Salad Recipe - 4 servings


1 large ripe tomato, diced

1/2 pound fresh spinach, torn into 2-inch pieces

1/2 pound skinless chicken breast, cooked and cut into 2-inch cubes

2 fresh lemons, quartered

Freshly ground pepper


Chilled diced tomato, spinach, and chicken. Layer spinach on 4 individual salad plates. Cover with diced tomato. Top with chicken. Squeeze lemon juice over top. Sprinkle with pepper.
