Three-Bean Salad Recipe - 6 cupsIngredients: 3 tablespoons olive oil 5 cloves garlic 2 tablespoons fresh lemon juice 1 1/4 teaspoons ground cumin 1/2 teaspoon oregano 2 teaspoons hot chili oil 1/2 teaspoon salt or to taste 1/4 teaspoon black pepper 15-ounce can cannellini beans, drained and rinsed 15-ounce can black beans, drained and rinsed 1 small white onion, coarsely chopped |
Method: In a blender, puree olive oil and garlic. Add lemon juice, cumin, oregano, hot chili, salt and pepper. Chill at least 3 hours. In a salad bowl, combine beans. Chill. Just before serving, add onion and toss with dressing. |
