Steamed Red Potatoes Recipe - 4 servings

Ingredients:

8 bite-sized red potatoes*

Method:

Select the smallest, most uniform bite-size (not dinner-size) red potatoes available. Scrub. In a covered vegetable steamer basket over boiling water, steam potatoes 15-20 minutes, or until just tender.

 

*You may want to phone your greengrocer and order potatoes in advance, many produce departments do not stock the tiny variety.

 

Variation : Chill. Toss with 1 red pepper that has been cut into julienne strips. Serve as a salad.
