Shrimp and Spinach Salad Recipe

Shrimp and Spinach Salad Recipe - 6 servings


1/2 cup cooked shrimp meat

1 English cucumber, very thinly sliced

1/4 cup rice vinegar

1 teaspoon granulated sugar

1/2 teaspoon salt

10 fresh spinach leaves, stems removed, steamed and chilled


In a salad bowl, combine the shrimp and cucumber. In a jar with cover, combine vinegar, soy sauce, sugar and salt, and pour over shrimp and cucumber. Chill 1 hour.


Just before serving, mix in spinach. Spoon into small bowls or custard cups. Serve with chopsticks.
