Shrimp and Soba Noodle Salad Recipe

Shrimp and Soba Noodle Salad Recipe - 8 servings

Ingredients:

1/4 cup rice wine vinegar

1 tablespoon soy sauce

1 tablespoon olive oil

1 tablespoon sesame oil

2 teaspoons brown sugar

1/2 teaspoon hot chili oil

2 cups chicken broth

2 cups water

5-ounce package soba noodles

4 cups chopped Chinese cabbage

1 recipe Pan-Steamed broccoli and cauliflower with lemon and hot chili sauce

1/2 pound small cooked shrimp

Method:

Combine rice wine vinegar, soy sauce, olive oil, sesame oil, brown sugar, and hot chili. Set aside. In a 2-quart saucepan, bring chicken broth and water to a boil. Add soba noodles. Stir lightly. Boil 5-8 minutes, or until noodles are just tender. Drain and rinse. Layer chopped cabbage in bottom of a serving bowl. Top with soba noodles and pan-steamed broccoli and cauliflower. Drizzle with dressing. Arrange the shrimp. Serve at once.
