Seafood Primavera Recipe

Seafood Primavera Recipe - 6 servings



1 whole egg

1 egg yolk

1 tablespoon Dijon mustard

2 tablespoons freshly squeezed lemon juice

2 tablespoons red wine vinegar

1/2 teaspoon salt

1/2 cup fresh basil

1 cup olive oil



1/2 pound snow peas

1 pound ziti or elbow macaroni, cooked al dente

6 green onions, thinly sliced

2 green peppers, diced

3 stalks celery, diced

1/2 pound cooked shrimp meat

1/2 pound cooked crabmeat

2 medium tomatoes, diced

1 cup fresh basil


In a blender, combine all dressing ingredients except olive oil. Process 2 minutes. With machine running, gradually add olive oil 1 tablespoon at a time. Chill. In a steamer over boiling water, steam snow peas 2-3 minutes or until crisp-tender. In a large salad bowl, toss pasta, snow peas, onion, peppers and celery. Sprinkle with shrimp, crab and tomatoes. Garnish with 1 cup basil. Chill. Serve with dressing on the side.
