Cold Scallop and Noodle Salad Recipe - 6 servings


1 pound scallops

1/2 cup thinly sliced celery

8-ounce can sliced water chestnuts

4 green onions, cut into strings

8-ounce package buckwheat (Soba) noodles

1 head red leaf lettuce, shredded

1/4 cup red-sodium soy sauce

2 tablespoons rice vinegar


In a nonstick skillet, saute scallops 2-3 minutes, or until cooked. Chill scallops, celery, water chestnuts, onions, noodles and lettuce. Just before serving, arrange lettuce over chilled salad plates. Top with noodles, then with scallops, celery, water chestnuts and green onions. Combine soy sauce and vinegar, drizzle over salads.
