Salade Nicoise Recipe

Salade Nicoise Recipe - 6 servings


1 bunch leaf lettuce, torn into bite-size pieces

6 1/2 ounce can water-packed tuna, drained

3 red potatoes, quartered and steamed

3/4 pound fresh green beans, cooked al dente

6 water-packed artichoke hearts, quartered

3 large carrots, sliced on the diagonal and steamed

1/2 green pepper, cut into thin strips

1 jalapeno pepper

1/2 white onion, halved, thinly sliced and separated

6 ripe plum tomatoes, quartered

12 Greek olives

1/3 cup Low-Fat Nicoise


Arrange lettuce over a tray or shallow salad bowl. Mound tuna in center. Arrange potatoes, green beans, artichoke hearts, carrots and peppers around tuna. Add onion slices, tomatoes and olives. Chill just before serving, drizzle with dressing.
