Romaine Salad Recipe

Romaine Salad Recipe - 4 servings


1/2 English cucumber, peeled and thinly sliced

1/2 red onion, cut into 1-inch cubes

2 medium tomatoes, cut into 1-inch cubes

Light Italian Vinaigrette

1 small head romaine lettuce, torn into bite-size pieces


In a salad bowl, toss cucumber, onion and tomatoes with desired amount of dressing. Chill 2 hours. Just before serving, add romaine and toss.
