Roasted Sweet Peppers Recipe - 8 peppers


8 large red and green sweet peppers

1 tablespoon olive oil

2 garlic cloves

2 teaspoons tarragon wine vinegar

3 teaspoons chopped fresh basil, or 1/2 teaspoon dried

1/2 teaspoon fresh rosemary or 1/4 teaspoon dried

1/2 teaspoon minced fresh oregano or 1/4 teaspoon dried


Preheat oven to broil. Arrange peppers on a foil-lined baking sheet. Broil under the skin of the peppers blisters and turns black, turning 2 to 3 times so that all sides are blistered and blackened. Remove from oven. Place in a glass bowl, cover with a kitchen towel. Cool 1 hour. Hold each pepper under cold running water, rub off charred skin. Remove stem and seeds, slice into strips. Combine remaining ingredients, pour over peppers. Chill 24 to 48 hours. Serve with tomato slices or add to sandwiches o pizza.
