Roasted Red Potatoes with Lemon and Olive Oil Recipe - 4 servings

Ingredients:

1 pound tiny red potatoes, halved

1/4 cup fresh lemon juice

1 tablespoon olive oil

1/2 teaspoon salt

1/4 teaspoon black pepper

Method:

In a 13 x 9 x 2-inch ovenproof casserole dish, arrange potatoes. Combine lemon juice, olive oil, salt and pepper, pour over potatoes. Roast in a 350oF oven 30-40 minutes or until potatoes are tender, turning 3-4 times to baste.
