Method: In a 13 x 9 x 2-inch ovenproof casserole dish, arrange potatoes. Combine lemon juice, olive oil, salt and pepper, pour over potatoes. Roast in a 350oF oven 30-40 minutes or until potatoes are tender, turning 3-4 times to baste.
