Roasted Garlic Recipe - 4 servings


4 whole garlic heads

2 teaspoons olive oil


Leaving garlic head intact, remove outer layer of skin from the head. Lay each head on the side and cut about 1/2 inch straight across the top. Arrange garlic in a small, shallow ovenproof casserole. Drizzle 1/2 teaspoon olive oil on top of each head, letting it run between the individual cloves. Cover pan with foil. Bake at 350oF for 30 to 45 minutes, until garlic is tender when pieces with a toothpick. Serve the heads on individual bread or dinner plates.


To eat, peel off individual cloves and squeeze the roasted garlic onto bread, potatoes or vegetables.
