Red Beets Vinaigrette Recipe

Red Beets Vinaigrette Recipe - 4servings


4 medium-to-large beets

1/3 cup raspberry vinegar

Black pepper to taste


Wash beets, trim stems and roots. Cut into julienne strips. In a covered vegetable steamer basket over boiling water, steam beets 10-20 minutes or until barely tender. Remove to serving bowl. While beets are still hot, toss with raspberry vinegar. Season with pepper.


Variation : while beets are still hot, toss with raspberry vinegar and 2 tablespoons walnut oil (Walnut oil will increase the calories by 125 per tablespoon).
