Popeye Spinach Recipe

Popeye Spinach Recipe - 4 servings


1/2 teaspoon extra-virgin olive oil

2 garlic cloves, peeled and minced

1 pound fresh spinach, trimmed and washed

2 tablespoons water

Salt and pepper to taste

1 teaspoon balsamic vinegar


Place a nonstick skillet over medium-low heat. When skillet is hot, add olive oil. When olive oil is hot, add garlic, saute until golden, about 1 minute. Add spinach and water. Cover and cook over medium heat until spinach is wilted, 2 to 3 minutes. Remove spinach, shaking off excess water, and place on a serving platter. Season with salt and pepper. Sprinkle with balsamic vinegar and toss gentle to mix.
