Pasta and Bean Salad Recipe

Pasta and Bean Salad Recipe - 8 cups


15-ounce cans cannellini beans, drained and rinsed

15-ounce can black beans, drained and rinsed

2 large tomatoes, coarsely chopped

1 red onion, coarsely chopped

2 cups cavatelli or other shell-shaped pasta

2 tablespoons olive oil

2 tablespoons white wine vinegar

3/4 teaspoon salt

1/4 teaspoon black pepper

3 cloves garlic, minced

1/2 cup fresh basil (0ptional)


In a salad bowl, combine beans, tomatoes, onion and pasta. In a covered jar, combine olive oil, vinegar, salt, pepper and garlic, pour over pasta and beans and toss. Chill at least 3 hours, Just before serving, garnish with basil, if desired.
