Paella Salad Recipe

Paella Salad Recipe - 6 servings


1/2 pound clams, steamed

1/2 pound mussels, steamed

1/2 pound scallops, poached

3 cups cooked Saffron Rice

1/2 red pepper, diced

1/2 green pepper, diced

2 ripe tomatoes, quartered

1 head romaine lettuce, torn into bite-size pieces

1 bunch watercress

2 fresh lemons, quartered

Black pepper to taste


Chill seafood, rice and vegetables. Line a large serving platter with romaine and watercress. Mound rice in center. Arrange clams, mussels and scallops around rice. Garnish with red and green peppers. Ring with tomatoes and lemons. Season with black pepper.
