Mussel and Tomato Salad Recipe - 4 servings


1 1/2 pounds mussels, in their shells

2 heads Bibb lettuce

1/4 cup diced ripe tomatoes

Creamy Dijon Vinaigrette


Wash and clean mussels. Steam just until shells open. Chill. Arrange lettuce leaves over chilled salad plates. Garnish with mussels and tomatoes. Pour dressing into cruet, pass with salad.
