Build-Your-Own Salad Recipe - 6 servingsIngredients: Buttermilk Dressing 1/2 cup nonfat sour cream 1/2 cup nonfat cottage cheese 1 cup low fat buttermilk 0.4-ounce package Hidden Valley Ranch Original Ranch Salad Dressing Mix 6 cups mixed greens 1 cup broccoli florets 1 cup cauliflower florets 4 large carrots, cut into julienne strips 1 bunch chopped green onions 1 large cucumber, peeled and diced 1 large ripe tomato, coarsely chopped |

Method: Combine sour cream, cottage cheese, buttermilk and salad dressing mix. Chill. Makes 2 cups. Arrange mixed greens in a medium salad bowl. In separate bowls, arrange the broccoli, cauliflower, carrots, green onions, cucumber, tomatoes and 3/4 cup of the buttermilk dressing. Each person can then build his or her own salad. Reserve remaining dressing for later use. |
