Mashed Potatoes Recipe

Mashed Potatoes Recipe - 4 servings


1 1/2 pounds potatoes (about 4 medium-large)


1/4 - 1/3 cup hot nonfat milk


Wash potatoes, then pare and quarter. In a 2 1/2-quart saucepan, cover potatoes with water, adding 1/2 teaspoon salt per 1 cup water, and heat to boiling. Cover and boil until tender, 20 to 25 minutes, drain cooking water.


Using a potato masher or electric mixer, mash hot potatoes thoroughly until no lumps remain. Gradually beat in hot milk (amount depends on kind and age of potatoes used) until potatoes are smooth and fluffy.
