Marinated Potato Salad Recipe

Marinated Potato Salad Recipe - 8 servings


3/4 pound tiny new red potatoes, cooked until barely tender

1/4 cup olive oil

3/4 cup cider vinegar

3/4 teaspoon salt

1/4 teaspoon black pepper

3 ripe plum tomatoes, quartered

14-ounce can water-packed artichoke hearts, quartered

1/2 medium red onion, cut into rings

1/2 red pepper, cut into thin strips

5-ounce can whole baby corn, drained


Into a salad bowl, cut potatoes in quarters. In a jar with cover, combine olive oil, vinegar, salt and pepper, pour over warm potatoes. Chill 2 hours. Add remaining ingredients. Toss to coat the salad with dressing. Chill 2 more hours.
