Marinated Peppers and Onions Recipe - 4 servings


1 medium green pepper

1 medium red pepper

1/2 medium white onion

1/2 medium red onion

1 large tomato

1 1/2 tablespoons olive oil

1 1/2 tablespoons fresh lemon juice

1 1/2 tablespoons fresh lime juice

1/2 teaspoon salt

3/4 teaspoon black pepper

1/2 teaspoon Tabasco sauce


Cut peppers in half, remove seeds and cut crosswise into 1/4 inch rings. Cut onions into 1/4 inch rings. Coarsely chop tomato. In a covered jar, combine olive oil, lemon juice, lime juice, salt, pepper and Tabasco. Pour over vegetables and toss. Chill 2-3 hours.
