Marinated Mushrooms Recipe

Marinated Mushrooms Recipe - 6 cups


1 1/2 pounds fresh mushrooms

2 cups Chicken Stock

1 cup rice vinegar


Wipe mushrooms with a damp paper towel. Trim stems. In a small stock pot, combine mushrooms with stock. Cook over medium heat, stirring frequently, 20-30 minutes. Remove from heat. Allow mushrooms to cool in the broth. Drain. Toss with rice vinegar. Serve or refrigerate for later use.


Variation : Substitute 1 head of cauliflower (florets only) for mushrooms. Cook 3-4 minutes.


Serving Suggestion : Marinated mushrooms, cauliflower and artichoke hearts are nice additions to an antipasto or vegetable platter.
