Marinated Mushrooms with Artichoke Hearts Recipe - 10 cups

Ingredients:

1 1/2 pounds fresh mushrooms

2 1/2 cups chicken stock

1-2 15-ounce cans artichoke hearts, drained

1 1/2 cups rice vinegar

Method:

Wipe mushrooms with a damp paper towel. Trim stems. In a small stock pot, combine mushrooms with stock. Cook over medium heat, stirring frequently, 20-30 minutes. Add artichoke hearts. Cook 10 minutes. Remove from heat. Allow mushrooms and artichokes to cool in broth. Drain. Toss with rice vinegar. Serve or refrigerate for later use.

 

Serving Suggestion : Good as an antipasto or salad course, as part of a dinner buffet or with sandwiches on a picnic.
