Loaded Baked Potatoes Recipe - 4 servings


2 large russet potatoes

1 teaspoon extra-virgin olive oil

8 sprigs of fresh rosemary

Salt and pepper

1/4 cup nonfat sour cream

1/4 cup nonfat cottage cheese


Preheat oven to 425oF. Meanwhile, scrub potatoes. Cut in half lengthwise. Lay each potato half, cut side down, on a piece of aluminum foil, rub on all sides with olive oil or spray with olive-oil spray. Tuck 2 sprigs of rosemary under each potato half. Wrap each half in aluminum foil. Bake at 425oF for 30 to 40 minutes, or until tender. Season with salt and pepper. Combine sour cream and cottage cheese, pass with potatoes.
