Hash Brown Potatoes Recipe

Hash Brown Potatoes Recipe - 2 servings

Ingredients:

2 medium potatoes

1 1/2 teaspoon chopped onion (optional)

2 teaspoons olive oil

Dash of salt and pepper

Method:

Boil or steam potatoes in their jackets. Chill. Peel. Shred. Toss with onion, olive oil, salt, and pepper. Pat potatoes into thin patties. Brown in a nonstick skillet over medium heat for 10-20 minutes. Turn. Brown 8-10 minutes longer, or to desired brownness. For extra crispness, using two spatulas, cut horizontally through center of patty, flip one half over the other.
