Grilled Vegetables Recipe - 8 servings


1 large white onion

2 small pattypan squash or zucchini

1 summer squash

8 bite-size red potatoes

8 large fresh mushrooms

1 Japanese eggplant

1 zucchini

1 red pepper

1 green pepper

4 hot peppers

8 cherry tomatoes

Horseradish Sauce


In a 6-quart stock pot, bring 4 quarts water to a boil. Add onion, squash and potatoes. Cook 5-6 minutes. Add mushrooms, eggplant, zucchini and peppers. Cook 2-3 minutes. Remove vegetables to colander to drain as they are cooked. Cut onion, squash, eggplant and peppers into 2-inch cubes. Alternate on skewers with whole mushrooms and cherry tomatoes. Prepare coals. Grill vegetables over hot coals 12-15 minutes. Arrange on serving platter. Serve with Horseradish Sauce.
