Green Beans with Tomatoes and Peppers Recipe - 8 servings


1 pound fresh green beans

1 red pepper, cut into 1/2-inch julienne strips

1/2 cup chopped red onion

1 16-ounce can plum tomatoes, chopped

1/4 teaspoon black pepper


Wash green beans, remove ends and strings. In a medium saucepan, combine ingredients and heat to boiling (do not boil). Cover. Reduce heat and simmer 10-30 minutes, or until beans are tender.
