Great Green Beans Recipe - 6 servings


1 pound fresh green beans

1 15-ounce can water-packed artichoke hearts, drained and quartered

1/4 cup fresh lemon juice

2 teaspoons extra-virgin olive oil

1/2 teaspoon salt

1/4 teaspoon pepper


Wash beans, remove ends and strings. Place a metal vegetable steamer in a medium saucepan filled with 1 inch of water. Bring water to a boil. Add beans, cover and steam 15 to 20 minutes, or until beans are just tender (do not overcook). Remove beans from steamer. Add artichokes. Toss with lemon juice, olive oil, salt and pepper. Serve hot or cold.
