Garlic Roasted Red Potatoes Recipe - 4 servings


1 pound small red potatoes

extra-virgin olive-oil

cooking spray

1/2 cup peeled and minced garlic (about 8 large cloves)

2 tablespoons chopped fresh rosemary sprigs or

1 teaspoon powdered rosemary

Salt and pepper to taste


Preheat oven to 450oF or 500oF (the highest setting, but not broil). Move oven rack to highest position. Place an 8 x 8 x 2-inch ovenproof nonstick baking pan on rack and heat at least 5 minutes.

Meanwhile, scrub potatoes and cut into quarters. Spray preheated baking pan with cooking spray until coated, about 5 seconds. Arrange potatoes cut sides down in pan. Sprinkle with garlic and rosemary. Spray with cooking spray and continue baking 20 to 30 minutes more, turning frequently, until potatoes are tender and golden brown. Season with salt and pepper.
