Country Fried Potatoes Recipe

Country Fried Potatoes Recipe - 4 servings


1 1/2 tablespoons extra-virgin olive oil

1 1/2 tablespoons minced garlic

4 medium red potatoes with skins (about 1 pound),

very thinly sliced

Extra-virgin olive oil

Cooking spray


In a nonstick skillet, heat olive oil over medium-high heat. Add garlic and saute 2 to 3 minutes. Spray potatoes lightly with cooking spray, about 5 seconds. Add potatoes to skillet and saute 4 to 5 minutes, turning frequently. Reduce heat to medium, partially cover with lid to steam can escape, and cook 8 to 10 minutes longer, turning frequently. When potatoes are tender, remove lid and reduce heat to low. Saute 2 to 3 minutes longer, or until nicely browned.
