Black Beans with Vegetables and Shrimp Recipe - 6 servings


1 1/2 cups Chili Salsa

1 cup Black Bean Dip

2/3 pound medium shrimps, cooked, shelled and deveined

1 English cucumber, thinly sliced

8 stalks celery, sliced diagonally into thirds

8 carrots, sliced diagonally into thirds

Fresh parsley for garnish

1 lime, cut into wedges

1-inch square piece tomato for garnish


Into the centre of a medium dish, spread 1/2 cup of the salsa. Mound bean dip over salsa. Arrange shrimps, cucumber, celery and carrots around dip. Tuck in parsley and lime wedges for garnish. Top bean dip with small piece of tomato and touch of parsley. Pour remaining cup of salsa into bowl and pass with vegetables.
