Baked Potatoes with Sour Cream and Chives Recipe - 2 servings


2 medium potatoes

1/2 cup nonfat sour cream

1/4 cup chopped chives or green onions

1/4 cup Tomato Salsa, preferably homemade


Scrub potatoes in their jackets (do not use new potatoes), prick with a fork. Bake at 425oF for 40 to 60 minutes, or at 350oF for 60 to 80 minutes. Cut potatoes open and top with sour cream, chives and salsa.
