Baby Carrots Vinaigrette Recipe - 4 servings


12 baby carrots

2 tablespoons raspberry


Black pepper


Select the smallest, bite-size carrots available. (If necessary, ask you greengrocer to special order them). In a covered vegetable steamer basket over boiling water, steam carrots 3-4 minutes, or just until crisp-tender. Remove to serving bowl. While carrots are still hot, toss with raspberry vinegar. Season generously with black pepper.


Variation : Serve cold as part of an antipasto tray.
