Artichoke Frittata Recipe - 8 ServingsIngredients: 2 eggs 3 egg whites 1 15-ounce can artichoke hearts, drained and cut into quarters 3/4 cup grated part-skim Cheddar cheese |
Method: In a bowl, lightly beat eggs and egg whites. Stir in artichokes and cheese. Pour into a 9-inch quiche or pie plate. Bake at 350oF 45-60 minutes, or until eggs are set and cheese is melted. Cut into wedges. Serve hot.
