Wonton Soup Recipe

Wonton Soup Recipe - 3 quarts


3/4 pound extra-lean boneless pork chops

1/4 teaspoon pepper

3/4 teaspoon salt

6 shiitake mushrooms, chopped

10 green onions, chopped

2 dozen wonton wrappers, thawed

12 cups reduced-fat chicken broth, preferably homemade

1 tablespoon reduced-sodium soy sauce


Grind pork in a meat grinder or blender. Sprinkle with pepper and salt. Toss with mushrooms and green onions. Place mixture by teaspoonful into centre of wonton wrapper, squeeze edges of wrapper together to seal. Drop wontons into 3.5 quarts boiling water, bring to a second boil. Boil 2 minutes, add 2 cups cold water. Bring to a third boil, boil 2-3 minutes. Drain. Bring chicken broth just to boiling. Stir in soy sauce. Add wontons. Serve.
