Tomato Shrimp Soup Recipe - 4 servings

Ingredients:

4 cups Chicken Broth

2 medium tomatoes, coarsely chopped

1 cup English cucumber, peeled, seeded and cut into 1/4 inch strips

1/2 cup firm tofu, cut into 1/4 inch cubes

1/2 cup cooked shrimp meat

Method:

In a small stockpot, bring chicken broth just to boiling. Add tomatoes and simmer 2 minutes. Add cucumber, tofu and shrimp, and simmer 1 minute.
