Swiss Barley Soup Recipe

Swiss Barley Soup Recipe - 10 quarts


1 1/2 cup dry pearl barley

2 cups water

4 quarts Chicken or Turkey Stock

1 large yellow onion, chopped

1/2 cup dry yellow split peas

1/4 cup dry egg pastina

1 tablespoon salt

1/4 teaspoon black pepper


Soak barley in 2 cups water overnight. In a stock pot, heat stock just to boiling (do not boil). Add barley with soaking liquid and onion. Simmer, uncovered, 1.5 hours. Add split peas, simmer 1 - 1.5 hours, or until barley and split peas are tender. Stir in pastina, salt and pepper. Simmer 5-10 minutes, or until pastina is cooked.
