Seviche Soup Recipe

Seviche Soup Recipe - 6 servings


1/2 pound scallops, chopped

1/2 cup fresh lime juice

1 1/2 cups Mr & Mrs T Bloody Mary Mix

2 cups reduced-fat chicken broth

1/3 cup chopped white onion

3 tablespoons chopped green chilies

1/2 teaspoon olive oil

1/4 teaspoon salt

1 tablespoon chopped fresh parsley

1 slice fresh lime, cut into 6 wedges


Cover scallops with lime juice. Marinate in the refrigerator for 4 hours, pour off lime juice. Preheat a nonstick skillet, add scallops. Cook, turning frequently for 4-6 minutes, or just until scallops are tender. Remove from pan, drain any excess liquid. Chill scallops several hours. Combine Bloody Mary mix, chicken broth, onion, green chilies, olive oil, and salt. Chill several hours. Just before serving, add scallops to Bloody Mary mixture. Ladle into soup bowls, Sprinkle with parsley. Garnish with fresh lime.
