Seafood Gazpacho Recipe

Seafood Gazpacho Recipe - 8 cups


28-ounce can Italian plum tomatoes, diced

1 cup Snappy Tom or Mr & Mrs T. Bloody Mary Mix

1/2 cup peeled and chopped English cucumber

1/3 cup chopped green pepper

1/2 cup chopped white onion

1 cup Beef Broth

1 tablespoon freshly squeezed lemon juice

2 teaspoons olive oil

1 tablespoon minced garlic

1/2 teaspoon ground cumin

1/2 teaspoon Tabasco sauce

1/2 teaspoon salt

1/2 teaspoon crushed basil

1/2 pound cooked shrimp meat


In a large glass bowl, combine all the ingredients except shrimp. Chill at least 2 hours. Just before serving, add shrimp.
