Curly Noodle Soup Recipe - 4 servingsIngredients: 15-ounce cans chicken broth or 6 cups homemade 2 cups water 8-ounce package soba noodles or rotini pasta 1 1/4 cups thinly sliced crimini mushrooms (optional) 1 1/4 cups snow peas, halved lengthwise (optional) 1 tablespoon reduced-sodium soy sauce |

Method: In a medium saucepan, bring 1 can of the chicken broth and the 2 cups of water to a boil. Add soba noodles and cook 5-6 minutes, or until noodles are tender. Drain and rinse.
In a 4-quart stockpot, heat the remaining 2 cups of broth just to boiling. Add mushrooms and snow peas, if desired, and cook 1 to 2 minutes. Add cooked noodles and soy sauce. Serve at once. |
