Minestrone Recipe - 3 1/2 quartsIngredients: 4 cups Chicken Stock 1 medium white onion, chopped 3 stalks celery, chopped 2 cloves garlic, chopped 1 leek, chopped, roots and green stems removed 28-ounce can plum tomatoes, diced 1 teaspoon basil 1/2 teaspoon oregano 1/4 teaspoon black pepper 3 cups Chinese (Napa) cabbage, shredded 1 medium zucchini, thinly sliced 2 carrots, grated 8-ounce can garbanzo beans 15-ounce can red kidney beans, with liquid* 3 cups cooked elbow macaroni |

Method: In a stock pot, heat stock just to boiling (do not boil), add onion, celery, garlic and leek. Reduce heat to simmer, cook 1 hour. Add tomatoes, basil oregano and pepper, simmer 30 minutes. Return stock just to boiling (do not boil). Add cabbage, zucchini and carrots, reduce heat and simmer 20 minutes. Add remaining ingredients and heat. |
