Hearty Black Bean Soup Recipe - 4 1/2 quartsIngredients: 1 recipe Bean Soup Stock 28-ounce can plum tomatoes, diced 1 large white onion, diced 3 stalks celery, diced 4 cloves garlic, peeled 1 1/2 cups dry black beans 1/2 cup dry black-eyed peas 1/2 cup dry pearl barley 2 cups cooked heavy-type pasta, such as penne |

Method: In a stock pot, bring stock to a boil. Add tomatoes, onion, celery and garlic. Thoroughly wash beans, peas and barley; add to stock pot. Simmer, covered, 3-4 hours, or until beans are tender. Stir in pasta. |
